Creamy potato skins (Prep: 15mins Cook: 1hr)

What you’ll need: 500g bag new potatoes, sour cream, 1 tbsp olive oil, grated parmesan cheese, 75ml half-fat soured cream, small bunch of shopped chives, 6 slices of bacon (cooked and snipped), sea salt and black pepper.

What to do: After pre-heating the oven to 170°C, use a fork to make small holes in the potatoes, before rubbing them with the oil. Place on a baking tray, sprinkle with salt and bake for 1 hour. Let them cool for ten minutes before cutting a small cross in the top of each potato. Add a sprinkling of parmesan and top with sour cream and chives. Finally, add black pepper according to taste.

Cranberry Chutney Bites (Prep: 20 Cook: 0)

What you’ll need: ½ cup of dried cranberries, 60ml water, 2 tbsp sugar, 1 tbsp finely chopped fresh ginger, 12 tbsp mango chutney, soft cheese, crackers and a saucepan.

What to do: Mix the cranberries, water, ginger and sugar in a small saucepan and bring to the boil. Cover, remove from heat and let stand for 15 minutes, before stirring in the chutney. Keep this covered and allow to chill for over 2 hours. When ready to serve, apply the cream cheese to the crackers and top with a teaspoon of chutney.

Smoked Salmon Rolls (Prep: 15 Cook: 0)

What you’ll need: 1 tbsp crème fraîche, 4 slices smoked salmon, ground black pepper, mixing bowl and cocktail sticks.

What to do: Mix the black pepper in the crème fraîche in a small mixing bowl. Spread around ¼ of the mixture on top of each smoked salmon piece. Roll up tightly with the crème fraîche on the inside of the salmon slice. Secure the roll with cocktail sticks every 2cm and cut a slice between each stick.

Cranberry Feta Pinwheels (Prep: 10 Cook: 0)

What you’ll need: 170g pack of dried cranberries (preferably sweetened), 250g cream cheese spread, 1 cup crumbled feta cheese, 1/4 cup chopped spring onions and 4 large flour tortillas.

What to do: Remove the mushroom stems and finely chop them, leaving the cap intact. Put a dash of olive oil and a small knob of butter into a frying pan before adding the bacon, chopped stems, onion and garlic. Sauté until onions are soft and then drain. Add remaining ingredients (excluding mushroom caps). Stuff the mixture into the caps and bake for 10 minutes at 190°C.

What you'll need: 4 medium potatoes, 1/4 cup breadcrumbs, grated parmesan cheese, 60ml melted butter, 10ml olive oil, sea salt and ground black pepper.

What to do: Having preheated the oven to 220°C, dice potatoes into bite-sized pieces. Pour olive oil and butter into an ovenproof dish and add potatoes, rolling them to ensure they are fully-coated. Add salt and pepper according to taste. Next, cover the potatoes with the cheese and breadcrumbs. Cook for 30 minutes, turning halfway through to ensure they're crispy on both sides. Allow to cool slightly before serving.

Pecan Rolo Bites (Prep: 10 Cook: 5)

What you’ll need: 25 pretzels, 25 Rolo chocolates, 25 pecan nuts.

What to do: After pre-heating the oven to 190°C, spread the 25 pretzels out on tin foil or greaseproof paper and place a Rolo on top of each pretzel. Put the sheet of pretzels into the oven. Apple Bites (Prep: 5 Cook: 0)
