Viral green goddess salad recipe

Try this easy, fresh salad recipe that packs a punch in both flavour and green goodness.

Shopping list for 4 people:


  • 1 lemon, juiced.

  • 30ml olive oil.

  • 1 tbsp rice vinegar.

  • 2 garlic cloves.

  • 1 small shallot.

  • 5g chives.

  • 20g walnuts, cashews or nut of choice.

  • 20g basil leaves.

  • 20g fresh spinach.

  • 10g nutritional yeast.

  • 1 tsp salt.


  • 400g green cabbage.

  • 350g cucumber.

  • 20g chives.

  • 35g spring onions.

  • 100g edamame or green beans.

Good to know

Cooking time: 15 minutes.


  • Finely dice cabbage, cucumbers, chives and spring onions.

  • Place all salad ingredients in a big bowl.

  • Add all liquid dressing ingredients to a blender, then add the dry dressing ingredients and blend until smooth.

  • Pour dressing over salad and mix well.

Optional: To serve, eat plainly or with tortilla chips or crackers.
